Honey Creaming

As we had been warned would happen, our honey that we still have went hard and became quite crystallised. We finally got around to creaming some, which wasn’t as technical as I thought. I put about 2 litres of hard honey into a pot and warmed it over a very low heat (using electricity this time!) and stirred and stirred and stirred. We added one tablespoon of already creamed honey which apparently ensures that the rest of the honey doesn’t make any more large crystals. After almost an hour of stirring we had success and the honey was very very smooth. Time will tell how it lasts in the jar, but so far we are loving it.
